
With the holidays here, I started thinking about my Grandma Dora’s recipe for Chocolate Mayonnaise Cake with Caramel Frosting. The mayonnaise part sounds yucky, but actually, this cake turns out so rich and moist, you can’t even taste the mayonnaise. It used to be a staple in our house for special occasions. I haven’t made one for years, but I got out my mother’s old recipe box and found the recipe. If you try it, I would use regular mayonnaise.
Chocolate Mayonnaise Cake
1 cup salad dressing (regular mayonnaise)
1 cup sugar
4 tablespoons coca.
Mix well and add:
2 cups sifted flour
2 teaspoons baking soda
1 cup warm water
1 teaspoon vanilla
Blend together, pour into a sheet cake pan, and bake at 350 degrees until done, when knife inserted into the center comes out clean. (Don’t you just love those old-fashioned directions?)
Quick Caramel Frosting
Melt 1/4 cup margarine or butter (I would use butter) in a sauce pan.
Stir in 1/2 cup firmly packed brown sugar and a pinch of salt.
Cook 2 minutes over low heat, stirring constantly.
Add 2 tablespoons milk — stir constantly until mixture comes to a boil.
REMOVE from stove.
Stir in gradually 1-1/4 cups sifted confectioners sugar. Add 1/4 teaspoon vanilla and mix well.
If too thick, additional milk may be added.
Frost the cooled cake right away.
Enjoy!

Never had it Dawn! But it looks and sounds pretty darn yummy to me! I’ve even been in a chocolate mood often lately, for some reason!? Comfort and love food for sure!
Love the opening feature shot and all of the fun fall Satirical Cartoons, Nuff said, I’ve been known to make an ass out of myself!!!
I’ll settle for this cake!!! By itself will be a great Thanksgiving enough for me!

Hey Dawn that’s a darn good rootin tootin thing for sure! I Seem to be on a bad streak lately only getting people pissed off at me!!! You may have broken that spell or whatever it was!
Then on second thought, was it only a figment of my imagination again? I am a bit too sensitive to what people say to me at times!
Nah, just horsing around being a goofball, which is one of my many specialties!

But hey hold on there nelly! I wasn’t fooling a bit about that cake; I will be eating a whole one by Thanksgiving its already a plan!!!

I don’t remember my grandmother cooking very much. And my aunt told me she was a terrible cook. But there a few things she did well. I always loved her sweet potatoes with the marshmallows on top.

That is all mattered she had her specialties and didn’t care to fuss with everything, probably a good strategy wouldn’t you say? What woman really wants to stand around peeling potatoes or getting teary eyes dicing up onions or what man does for that matter! To me dessert is the best part of the dinner! Oh yea I have a big sweet tooth! Lucky me I still eat what I did at 16; got my teeth to boot and only a few fillings those from when I was a kid! If this all makes me keel over one day; then at least I died enjoying my last request! Cake, pie, banana splits, cookies, brownies any will do me fine!

I agree. I’m not a big fan of mayonnaise, but I guess it makes the cake more moist. You can slather it on chicken before baking it, too.

I have absolutely no idea where my grandmother got that recipe. I’ve never seen one like it. I just know it became a family tradition. And yes, it is very rich, especially with the caramel frosting, probably very unhealthy, and very delish! Thanks, Kym!
